If you are looking to ring in the new year with a delicious meal with the company of your family and friends, here are some great New Years Eve dinner menu ideas to enjoy before the ball drops.

Ham Spread

Makes about 2 cups of spread

Ingredients:

  • 1 1/2 cups diced ham
  • 1 cup diced roasted red peppers
  • 1/2 tsp. smoked paprika
  • 1 tablespoon sherry vinegar
  • 8 oz. softened reduced-fat cream cheese
  • 1/4 cup chopped fresh parsley

Directions:

  1. In the food processor, pulse ham, peppers, paprika and vinegar until the ham is finely chopped.
  2. Move the ham mixture to a bowl.
  3. Add the cream cheese and parsley.
  4. Stir until smooth.
  5. Serve on a toasted bread.

French Onion Beef Tenderloin

Ingredients:

  • 1 lb. beef tenderloin, 1-1 1/2 inches thick, trim fat and cut into 4 steaks
  • 1/2 tsp. minced dried onion
  • 1/2 tsp. salt, divided
  • 1/2 tsp. freshly ground pepper
  • 2 tablespoons canola oil, divided
  • 2 large thin sliced sweet onions
  • 1/3 cup dry sherry
  • 1 tablespoon all-purpose flour
  • 1 cup reduced-sodium beef broth
  • 2 tsp. chopped fresh thyme
  • 4 slices of toasted whole-grain baguette
  • 1/2 cup shredded Swiss cheese

Directions:

  1. Season steaks with dried onion, 1/4 tsp. of salt and pepper.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat.
  3. Lower to medium heat and add steaks and cook for 3-6 minutes per side, turning once, until cooked to one's desire.
  4. Tent steaks with foil on a plate.
  5. Position a rack in upper third of oven and turn on broiler.
  6. Add another 1 tablespoon oil to the pan.
  7. Stir in onions and sherry, cover and cook over medium heat for 10-12 minutes, stirring occasionally, until the onions are tender and the liquid has evaporated.
  8. Dust flour over the onions and stir to coat.
  9. Add the broth, thyme and 1/4 tsp. of salt.
  10. Cook for an additional minute or until bubbling and thickened.
  11. Turn off heat and return the steaks and juice to the pan.
  12. Top steaks with some of the onions and place steak on a slice of baguette and some cheese.
  13. Place the pan in the oven and broil for 2 minutes until the cheese is melted and bubbling.
  14. Add some more onions and sauce to the steaks before serving.

Champagne Cake

Ingredients:

  •  2 boxes of white cake mix
  • Champagne or sparkling wine
  • Few drops red food coloring
  • 16 oz. can vanilla frosting
  • Fresh strawberries

Directions:

  1.  Preheat oven to 350 degrees F.
  2. Grease and flour two 8x1-1/2-inch round cake pans.
  3. Prepare the cake mix according to directions on box, but instead replace water with Champagne.
  4. Pour batter evenly into the greased, floured pans.
  5. Bake for 30 to 35 minutes or until a toothpick inserted in center comes out clean.
  6. Cool in pans for 10 minutes on wire racks.
  7. Remove cakes from pans and cool completely on the wire racks.
  8. Add a few drops of food coloring into frosting and stir to make a light pink color.
  9. Place one cake layer, bottom side up, on a platter.
  10. Spread with about half of the frosting. Add the second layer, top side up. Spread top and sides of cake with the rest of the frosting.
  11. Add strawberries for garnish.
