  1. Slice two small zucchini in thin slices, about 1/8 inch thick.  You should have about 2 1/2 cups total.
  2. Combine 1/4 cup ground almonds, 1/4 cup grated parmesan cheese, 1/4 teaspoon of salt, 1/4 teaspoon of garlic powder, and 1/8 teaspoon black pepper.
  3. Put a splash of milk in a small bowl, about 1/4 cup should be enough.  Dip zucchini slices in the milk, and then in the dry mixture to coat.
  4. Place coated zucchini slices on an oven-safe wire rack covered with cooking spray.
  5. Place wire rack on a large baking sheet and bake for 20 minutes at 425 degrees, until browned and crispy.

Serve these delicious crunchy treats immediately while they are still warm.
