Try this recipe and learn the restaurant secret on pan searing tilapia. Serve it with a delicious corn and bean relish and you will definitely impress your family and friends with this dish! Watch out you might need to double the portion next time.

Ingredients:

  • 1 tbsp. extra virgin olive oil
  • 1 diced red onion
  • 2 cloves of chopped garlic
  • 1/2 minced jalapenos
  • 4 ears of corn, cut off kernels
  • 1 tbsp. cumin
  • 15 oz. can of white beans, rinsed and drained
  • 1 cup of grape tomatoes, halved
  • 1 lb. of tilapia, at least four nice-sized filets (tilapia shrinks when cooked)
  • 2 tsp. smoked paprika
  • 1 tbsp. butter (salted)
  • 1/2 cup of chopped cilantro
  • Salt and pepper to desired taste

Cooking Directions:

  1. Heat a large saute pan over medium high heat and add about 1 tsp of olive oil. Add in the onions, garlic, and jalapeno and cook for about five minutes or until the onions are translucent and soft.
  2. Stir in corn, cumin, and a half a cup of water. Season with salt and pepper and pop a lid on. Cook for about three minutes. If you don't have time to cut the kernels off of ears of corn, frozen can be used. Canned corn is too salty and soft to make your relish pop.
  3. Remove the lid and stir in the beans and tomatoes. Cook just until the beans and tomatoes are heated through. If desired, black beans can be substituted for white.
  4. Remove from heat and stir in the butter and cilantro. Add additional seasonings to taste.
  5. Season each side of the tilapia with salt, pepper, and paprika. Use your fingertips and gently rub in the spices.
  6. Heat a separate saute pan on medium high heat and add the rest of the olive oil. Once the oil is hot, add the tilapia to the pan. Cook for about two minutes on each side or until the fish is opaque and is just cooked through. Tilapia is thinner and cooks fast, so don't leave it unattended. You do not want to overcook!

Serve your tilapia over a bed of the corn with bean relish, or load it all on a warmed hoagie bun for a delicious sandwich. Add a spring green salad and sangria tea for a delightful meal. Typically fish is served with white wine, but sangria is so popular with sweet corn relishes, mixed with your favorite blend of iced tea, really compliments your dish. This recipe serves about 4 people.
