Salmon and Basil Pasta
Makes 4-6 servings.
- 1 pound of your favorite pasta, cooked per package directions (rotini or ridged pastas works really well)
- 1 5 oz can boneless salmon or boneless salmon left overs (if you have a little more it's fine)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 cloves of garlic, diced or mashed
- 2 small cans sliced mushrooms, or 8 oz fresh sliced mushrooms
- 1 tablespoon dried basil or 1/4 cup chopped fresh basil washed and well dried.
- 1/4 cup grated parmesan cheese
- Get your salted pasta water started over high heat.
- In a frying pan over medium-high heat, melt the butter and add the olive oil. Open and drain your canned items.
- When it is very hot, add the salmon, garlic, and mushrooms. It should sizzle when the items are added so be careful to not splash yourself. Stir frequently so that nothing burns. It is ok to turn the heat down slightly if necessary, but you want to keep everything sizzling or else the mushrooms and salmon will get oily.
- Add your pasta to your water when it boils.
- When the garlic has begun to look golden brown, and the mushrooms are cooked through, add the basil and cook for another 2-3 minutes stirring frequently. Tip: Add a little bit of cream for more of a creamy sauce.
- Add a dash of salt and pepper. Remove to low heat, and check your pasta to see if it al dente. If so, drain, and toss with your salmon mixture. At the last minute, toss in the parmesan, and serve immediately.
