As Easter approaches this weekend, I have been trying to come up with unique ideas for an Easter Sunday brunch for the family. While browsing the internet I came across a blog site called www.dinnerwithjulie.com  where she shares her last minute and creative meal ideas for those who like recipes that are a little bit different yet still offer gourmet classiness and flavour. I delved futher into her blog database and found a few delicious ideas for using spring, farm fresh eggs while incorporating leftovers from the fridge.

I have cooked many eggs over my lifetime, boiled, fried, scrambled, etc.. but a baked egg is a new concept to me! Reading on in the blog I discover it really is not as difficult as it may sound.

Baked Egg Instructions:

  1. Simply pour two eggs into a ramekin, over a layer of cream and milk.
  2. Salt and Pepper them and sprinkle with fresh Parmesan.
  3. Bake at 350F and they'll be done in 15 minutes!
  4. With some roasted veggies or home fries on the side it is a meal that can be enjoyed any time of day.

Who doesn't love poached eggs on toast? Either in the form of Eggs Benedict or on their own. it is a simple and comfortable meal. An idea from the dinnerwithjulie.com blog is to use up leftover spinach and a clove of garlic, taking this basic breakfast from ordinary to extraordinary. The crustier the bread the better for this one, toasted with some butter and 2 poached eggs on top, sprinkled with salt, meanwhile in a skillet, lightly sautee minced spinach leaves and a chopped garlic clove, and then place on top or beside the eggs and toast.
