Southerners have many ideas about BBQ.  This Southern delicacy is often prepared with a mustard or vinegar base, a simple BBQ sauce or smoked and not sauced.  There are regional favorites and many opinions as to which is best.  I can promise once you make this recipe, you will be asked to make it again and again!   Very easy, a great combination of flavors and this recipe allows you to use the Crock Pot to finish this dish.   You must brown the roast to get this started, but this prep gives the flavor boost needed!  This BBQ will be a welcomed addition to a Pot Luck served an unexpected appetizer as a BBQ Stack, or served as a sandwich.  Either way, topped with Cole Slaw is a memorable addition.

BBQ - Southern Style with a Twist

Ingredients:
  • About 2 lbs Pork Loin - (Usually this Loin comes about 4 lbs, cut in half, freeze the 2nd half,  as you do not crowd in the crock pot)
  • 1/2 cup BBQ sauce -- your favorite brand
  • 1/4 cup brown sugar
  • 1 large onion cut in half and then in thin moon slices
  • 1 cup prepared coffee, do not use flavored coffees
Directions:
  1. First, salt and pepper this roast with about ½ teaspoon of salt and pepper.  Then, brown this Pork Loin on all sides in a Dutch oven on the stove top in about 2 tablespoons of heated olive oil.
  2. After you have browned the Roast, remove the meat and transfer this to the Crock Pot.  To the original Dutch oven, add at least one large onion, cut in half and then sliced thin. (I might use 2 onions depending on their size).  Allow this onion to help get up the ?browned bits? off the bottom of the pan.  Sauté these onions about 6 - 8 minutes.  Then, add 1 cup of prepared coffee to the pan.  I do not suggest using a flavored coffee.  This will get all the bits off the pan.  Then pour the coffee and onions over the Roast.  You then will top the Roast with the BBQ Sauce and the brown sugar.
  3. Initially set the Crock Pot on high.  Once this gets warmed, about 30 minutes or so, you can re-set to low for 8 - 10 hours.
  4. This pork will pull-apart easily using two forks.  Allow this BBQ to cool in the juices.  You can easily re-warm this in the Crock Pot.
  5. Enjoy on Slider Rolls or Bakery rolls.
An interesting topping is also Cole Slaw for a Southern twist.  A recipe suggestion follows. Simple, but very good!  The coffee is the unexpected ingredient that adds great flavor. ***Again, do not try to double this recipe as the crock pot will be too crowded.

Southern Cole Slaw ? Best if allowed to rest for about 60 minutes

Ingredients:
  • 1 head of Napa or Savoy cabbage, shredded
  • ½ cup of your favorite mayonnaise
  • 1 teaspoon of sugar
  • 3 tablespoons of apple cider vinegar
  • Pinch of salt and pepper
  • Small bunch of green onions, sliced thin using all of the white and some of the green
Directions: Combine the cabbage and the green onions.  In a separate bowl, whisk the mayonnaise, sugar, vinegar and salt and pepper.  Pour this over the cabbage mixture and toss.  Allow to rest in the fridge for 60 minutes if possible to begin to marry the flavors. Use this slaw as your topping to your Southern Slider or BBQ Sandwich.  I can promise, this recipe will become a favorite, Southern or not!
