Say you are a great cook; you cook gourmet meals for your family and friends on a regular basis with rave reviews. Yet every time you try to bake something, even something as simple as cookies or brownies for your child’s bake sale at school, it is a complete mess. This is a much more common problem than you think, and the reason behind it is a lack of precision when baking.

Many great cooks don’t bother to follow recipes, and they rarely use proper measurements. They use a pinch of this and a dash of that, and their dishes come out perfect and delicious. However, when they take this method and try to apply it to baking is when their baked goods come out horrible. This is because baking is like chemistry; in order for a solution (dish) to turn out, the ratios (measurements) have to be perfectly precise.

At this point, you may be thinking “but wait, I see the chefs on TV not measure properly and their dishes turn out great”. While this may be true, those chefs have been baking for years, and often they have gone to culinary school. They know what ratios they need in baking without having to think about it, and they do not need to measure properly because they bake on a regular basis.

Since you are a cook that is newer to baking, it is important that you follow recipes exactly by using the proper measurements and the proper measuring utensils. This means using liquid measuring cups for liquid ingredients, measuring cups for solid/dry ingredients, and measuring spoons when necessary. Using alternative measuring tools (such as a regular cup or regular spoon), improper measurements, and not properly following recipes will lead your baking to not turn out good.
