A common staple in American Chinese food, fried rice is sometimes mixed with scrambled eggs, scallions, vegetables and meat. The rice is seasoned with soy sauce rather than table salt. Fried rice in America varies in appearance from stark white with no additives to dark or light brown depending on the ingredients and the area of the country where it is being served. Fried rice is also prepared with everything but the kitchen sink and is often sold under the name of “house fried rice.”

Leftover rice is typically used to make fried rice, as fresh rice will contain moisture that will cause it to steam instead of fry. It is often stir fried in a wok with pork fat or vegetable oil to prevent sticking.

The rice can be eaten on its own as a main dish or as an accompaniment to other dishes. It's not difficult to prepare and the chef has the ability to add whatever ingredients are desired.

The secret is to use previously cooked rice. Let’s take a look at some fried rice alternatives, but first - basic fried rice recipe.

Basic Fried Rice Ingredients:

  • 3 cups of cooked rice;
  • 2 tablespoons of sesame oil;
  • 1 small white onion chopped;
  • 3 tablespoons of soy sauce;
  • 2 eggs slightly beaten

Directions:

  1. Preheat a large skillet or wok on medium heat and add sesame oil to the pan. Add white onion and fry until it is tender.
  2. Slide the onion to one side of the pan, add the beaten eggs to the other side of the pan and use a spatula to scramble the eggs.
  3. When the eggs are cooked, mix the eggs and onion together and add the rice to the mixture.
  4. Add the soy sauce and cook until the mixture is thoroughly heated.

This recipe serves 8.

Pineapple Fried Rice

Fried rice is the type of dish that will accommodate just about any combination of ingredients. To give your rice the flavor of Hawaii, begin with the basic rice recipe and add in 3 cups of diced pineapple and one quarter cup of pineapple juice. To give your recipe some snap, crackle and pop add one teaspoon of red pepper flakes or hot sauce. More or less of the flakes or sauce can be added to taste.

Sausage Fried Rice

Par cook your favorite type of sausage and chop into bite size pieces. While the sausage meat is still warm add it to the basic fried rice recipe and cook until the sausage finishes cooking. Also add in equal parts of Worcestershire and steak sauces, about one quarter cup total. If this recipe is served the next day, the rice will have time to absorb the flavor of the sausage.

Seafood Fried Rice

Grill shrimp and lobster meat with butter, chopped onion and peppers. Add the mixture to the basic fried rice recipe, along with one quarter cup of crushed garlic, 2 tablespoons of teriyaki sauce and 2 cups of cashews. Heat the mixture until the rice is tender.
