Peanut butter is one of the mainstays of American food, whether it be a simple PB&J sandwich, or peanut butter tinged cookies and candies. Originating as a way for toothless individuals to acquire protein, it is now a widely consumed condiment that inspires passionate arguments, such as the classic "crunchy vs. creamy" debate, and is often associated with one's youth. In addition to standard peanut butter, however, there has been a rise in alternative nut butters, including those made with almonds, hazelnuts, and even sunflower seeds. These have become popular for several reasons, one being to accommodate those with peanut allergies, along with the interest in the new flavors and uses presented with these products.
Still, nothing beats the simplicity and aroma of homemade nut butters. Unlike commercial nut butters, which often contain corn syrup and artificial flavorings, homemade nut butters provide a way to enjoy the taste and texture of nut butters without the artificial additives, and allow you add your own flavors to the mix. If you've never made your own nut butter before, the following three recipes are a great way to get you started.
Espresso Almond Butter
- 3 cups almonds
- 1 tablespoon espresso powder
- optional: 1 tablespoon stevia or agave nectar
Place all ingredients in a food processor, and pulse until it becomes a gritty paste. With a spoon or spatula, scrap the sides of the food processor bowl. Process until a creamy texture is achieved.
If you desire a crunchy almond butter, simply stir 1 cup of chopped almonds into the finished product.
If you want an even creamier nut butter, add 1 tablespoon of a neutral-tasting oil, such as coconut oil, prior to processing.
Spiced Tahini Peanut Butter
- 2 cups hulled sesame seeds
- 1 cup roasted peanuts
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
Blend sesame seeds and peanuts in your food processor until a thick paste forms. Stir in the spices and pulse until creamy.
Sweet and Salty Sunflower Seed Butter
- 3 cups sunflower seeds
- 1 teaspoon sea salt
- 2 tablespoons honey
Place seeds, salt, and 1 tablespoon of the honey in a food processor and pulse until creamy. Add the remaining 1 tablespoon of honey and pulse until blended. Enjoy!
*Store all nut butters in an air-tight container, such as an empty mason jar or Tupperware container.
* If you wish, you can also make small batches of nut butter using a coffee grinder in place of a food processor.
